Mónica Sánchez graduated in Veterinary Medicine in 2007 from the University of Cordoba and later she graduated in Food Science and Technology (2013). She obtained the master’s degree in Agri-Food in 2015 and she is currently working as PhD student at the Department of Chemical Engineering and the Department of Food Science and Technology from the University of Cordoba. Her PhD research focusses on cellulose and phenolic compounds with antioxidant capacity obtained from olive pruning.
